A Legacy of Love & Heritage
The name “Carlitos” carries a legacy that began in 1940s San Antonio, Texas. A young boy named Charles was lovingly called “Carlitos” by his abuela. Decades later, that boy—a proud Marine—passed the name to his son, Carl.
In 2025, Carl and his wife Terri embarked on a journey to bring this heritage to O‘ahu. Refining family recipes with friends, they created carnitas that are the perfect balance of tender, moist, and crispy.
